1 cup yellow corn meal
1/2 cup plain flour
3/4 teaspoon seasoned salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup finely chopped onion
1 pinch of salt
1/2 teaspoon ground black pepper blend
1/2 teaspoon ground white pepper blend
1/2 teaspoon sugar
1 finely chopped jalapeno
1 small can whole kernel corn
Beat eggs, mix ingredients together, add just enough buttermilk to get desired consistently.
As in all my recipes, add or subtract ingredients to your taste.
Drop spoonfuls into boiling oil, occasionally turn to insure even cooking. Do not overcook.
